Guar gum
High water binding capacity
Guar gum is extracted from the seeds of the Indian tree Cyamopsis tetragonolobus. It has a high water-binding capacity. Guar gum is listed as an additive under the European authorisation number E 412 in the ingredient lists of various foods. It is used there as a thickener, gelling agent, flour treatment agent or filler. Guar gum is generally approved for all foods, including organic products. Since guar gum is not digested, it is also often used for dietary or probiotic foods (satiating and swelling agents).
